Normally 8 to 14 lbs—Popular smoked for barbeque or brined for corned beef. The rule for brisket is low and slow as the brisket is a well worked muscle that can be tough but when braised, smoked, or slowly roasted at low temperatures, it's rendered soft and satisfying with incredible deep flavor.
